No time to cook? Slow cooker = delicious meal!


Slow Cooker Honey Garlic Chicken and Veggies

Gluten free • 8 hrs to make • Serves 4

Meat

8Chicken thighs, bone-in skin-on - brown in a skillet first if you like a crispy skin

Produce

16 ozBaby carrots
16 ozBaby red potatoes
1 tspBasil, dried
2 clovesGarlic
16 ozGreen beans
1/2 tspOregano, dried
2 tbspParsley, fresh leaves

Condiments

1/2 cupHoney
1/4 cupKetchup
1/2 cupSoy sauce, reduced sodium

Baking & Spices

1/4 tspBlack pepper, ground
1/4 tspRed pepper flakes
Put everything in the slow cooker and cook on low for 8 hours.  Substitute other veggies if you're not a fan of some of these! A delicious and not too sweet meal that couldn't be easier to prepare!

Quick & Easy "Fancy" breakfast - Honey Blueberry Sauce

So good you'll want to just eat it with a spoon, (go ahead!) or drizzle over waffles, pancakes or danishes. Even as a yogurt topper - so good, so fresh, so easy!

Honey Blueberry Sauce
Prep Time: 10 minutes
Yield: 2 cups
Honey Blueberry Sauce
Honey and cinnamon add a sweet and spicy flavor to cooked blueberries. This easy filling is great for eating on toast, pastries, baked goods, or eating with a spoon.
Ingredients
4 cups fresh blueberries
2 Tablespoons water
1/4 cup honey
1/2 teaspoon cinnamon
Ingredients
1. Bring the water and blueberries to a boil over high heat. The berries will start to release juice as they heat up. Reduce the heat and simmer for 4-5 minutes, or until the water and juices simmer out.

2. Stir the honey and cinnamon into the cooked berries. Let cool. Makes about 2 cups of sauce/filling. Store in a sealed container in the refrigerator.

Honey Bourbon Grilled Flank Steak

Yummmmmmm - perfect for summer grilling!

Honey Bourbon Grilled Flank Steak

What you need
1 flank steak. About a pound.

1/2 soy sauce (I prefer low sodium)

1/2 cup bourbon 

3 enormous squeezes or dollops of honey

6 crushed garlic cloves (just rip them from the head, smash with the side of a knife and rough chop a little bit, skin and all)

3 ounces ginger, rough chopped, skin and all.

Salt and pepper

1 big Ziploc bag

1 summer barbecue set up -- or grill pan on the stove if you must

Here's what you do

1. Toss all your ingredients in the bag, seal, shake and massage and then leave to marinate for a few hours.

2. Barbecue it. To me, this means seared over super hot coals until crusted on the outside and perfectly medium rare on the inside. Takes just a few minutes per side. Flip a few times. Done.

3. Let it rest for a few minutes. Then, eat it. Eat it all. I've learned to buy bigger flank steaks than I think I need, because I always end up slicing off extra bits for me while everyone gets seated.
