Want healthier baked goods? Substitute honey!

Did you know that honey can be used instead of sugar in certain recipes? The beekeepers at the century-old Hunter’s Honey Farm offer these tips on substituting honey in recipes for baked goods.
Honey is sweeter, so use about one-third to one-half as much honey as you would sugar. Also, know that 12 ounces of honey equals one cup, as containers are measured in weight, not volume. Honey is 18 percent water, so reduce the amount of liquids in the recipe by one-fifth. Lower your oven temperature by 25 degrees, and coat your utensils with cooking spray to prevent the honey from sticking to measuring cups or spoons. Finally, if the recipe doesn’t include sour milk or sour cream, add a pinch of baking soda to counteract the acidity in honey, which can cause over-browning.

Ingredients
  • 1 red bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 6 radishes, thinly sliced
  • 1 small red onion, quartered, thinly sliced
  • 1 small cucumber, cut in half and thinly sliced
  • 1/4 cup blue cheese crumbles
  • Honey-Lemon Dressing
  • 1 tablespoons honey
  • 2 tablespoons lemon juice
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon dried oregano
  • 1 clove garlic, pressed
  • 1/8 teaspoon freshly ground black pepper
  • Kosher or sea salt to taste
Directions
Combine all salad ingredients in a salad bowl, toss to combine, drizzle with Honey-Lemon Dressing (below), and top with blue cheese crumbles.
Honey-Lemon Dressing
Whisk all the dressing ingredients together until smooth and combined. Refrigerate until ready to use.

Sweet and spicy easy summer main dish!

Honey Glazed Chicken
Ingredients
  • 1/4 cup Sue Bee® Honey
  • 1/2 cup flour
  • 1 tablespoon soy sauce
  • 1/4 cup lemon juice
  • 1/4 cup backed brown sugar
  • 1/2 cup butter
  • 1 chicken
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 1/2 teaspoons curry powder
Instructions
  • 1
    In a bowl, mix flour, salt and cayenne pepper.
  • 2
    Add chicken pieces and shake around until coated.
  • 3
    Pour 4 tbs butter into a 13 x 9 inch baking pan, place chicken in pan, turning once to coat.

    Bake at 350 F for 30 minutes.

    Meanwhile, mix Sue Bee Honey, brown sugar, lemon juice, soy sauce, curry powder and remaining butter.

    Pour over chicken.

    Bake 45 minutes more or until chicken is tender, basting several times with drippings from the pan.
