Serves: 2-4
Ingredients
  • 2 large eggs
  • 2 egg whites
  • 1/2 cup warmed milk (I used 1%)
  • 1/2 cup all-purpose flour
  • 1/8 teaspoon salt
  • 4 teaspoons honey
  • 1/2 teaspoon vanilla extract
  • A couple handfuls of soft fruit (strawberries, blueberries, bananas)
  • Cooking spray
  • Honey
Instructions
  1. Preheat oven to 385 degrees F.
  2. Spray a 10.5 inch oven proof pan with cooking spray and set aside.
  3. In a small bowl beat the egg whites until peaks form.
  4. In a larger bowl, gently beat the whole eggs with flour, salt, honey, and vanilla.
  5. Whisk in the warm milk and then gently fold the egg whites into the batter.
  6. Heat the prepared pan on the stove over medium heat.
  7. Pour the batter in and cook for a few minutes until the edges just begin to set.
  8. Layer your fruit on top and then transfer the pan to the oven.
  9. Bake for 9-11 minutes or until puffed up and golden.
  10. Drizzle with honey 
Notes
I loved the flavor of the bananas in this but they turned brown immediately. If you don’t mind ugly breakfast then don’t worry about it. Next time I make this I’ll press the banana slices into the batter a bit so that they don’t show. I’m fussy like that.

Bakes up super light and fluffy. Kinda like, I don't know, a cloud?
I was afraid to make this at first because I thought it was going to be a sticky mess in the pan. I’m really glad took the risk because it lifted out beautifully and it’s off-the-hook good. Light, eggy and sweet, it’s like a cross between a pancake and a Dutch baby. I’m definitely trying this with fresh, juicy peaches when they are in season.
